This sheet pan recipe is the ultimate solution for a stress-free, high-quality dinner. By roasting everything together, the juices from the organic chicken infuse the potatoes with incredible flavor, while the rosemary releases its aromatic essential oils. It’s a clean, balanced meal that provides lean protein and complex carbohydrates with minimal cleanup.
Ingredients
2 Large Organic Chicken Breasts: (Skin-on or skinless).
500g Organic Potatoes: (Small waxy varieties work best), halved or quartered.
3-4 Sprigs of Fresh Rosemary: Roughly chopped or kept whole for roasting.
2 tbsp Organic Ghee or Coconut Oil: (Melted).
A pinch of Sea Salt: To taste.
1 tsp Organic Olive Oil: For drizzling over the chicken.
Preparation
Preheat & Prep: Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper.
Season the Potatoes: Toss the halved potatoes in a bowl with the melted ghee (or coconut oil), half of the rosemary, and a pinch of sea salt. Spread them out on the baking sheet.
Prepare the Chicken: Pat the chicken breasts dry. Rub them with olive oil and the remaining rosemary and sea salt.
Arrange: Place the chicken breasts in the center of the baking sheet, surrounding them with the rosemary potatoes.
Roast: Bake for 25–30 minutes. Halfway through, give the potatoes a quick toss to ensure they get crispy on all sides. The chicken is ready when it reaches an internal temperature of 75°C (165°F) and the potatoes are golden brown.
Rest & Serve: Let the chicken rest for 5 minutes before slicing to keep the juices inside. Serve everything warm right from the sheet pan.

Why this Recipe is Low-Histamine Friendly
This meal is a cornerstone of a well-tolerated diet:
Fresh Organic Chicken: When cooked immediately after purchase, fresh chicken is very low in histamine and easy for the body to process.
Potatoes: These are a “safe” starch that provides energy without the potential gut irritation of gluten-containing grains.
Fresh Rosemary: Using fresh herbs instead of dried spice blends avoids potential hidden fillers, yeast, or high-histamine preservatives.
Ghee: As a clarified butter, it is often better tolerated than regular butter or inflammatory vegetable oils.
Important “Watch-Out” Points
Freshness is Key: Only use chicken that has been kept at a constant cool temperature and is well within its expiration date to avoid histamine buildup.
Avoid Charring: Roast until golden, but avoid blackening or charring the meat or potatoes, as this can create compounds that are harder for sensitive systems to digest.
No Garlic or Onions: While common in sheet pan meals, omitting them makes this recipe much more accessible for those with sensitive digestive tracts.
