🎃 Creamy Pumpkin Pasta (Tomato-Free) | Low-Histamine & Savory
Forget heavy tomato sauces! Our pumpkin pasta is the perfect low-histamine alternative. Creamy, bright orange, and packed with nutrients. A treat for the soul that proves that HIT doesn’t have to mean sacrificing flavor.
Tomato sauce is often a no-go for those with histamine intolerance. But don’t worry—pumpkin is here to save the day! It provides a wonderfully creamy texture and a natural sweetness. We use Hokkaido pumpkin (SIGHI 0) for this recipe because it doesn’t need peeling and offers an intense color. Combined with gluten-free pasta and fresh herbs, this dinner will keep your tummy happy.
Ingredients
10.5 oz (300g) Organic Hokkaido Pumpkin: (Descored and diced, SIGHI 0).
7 oz (200g) Gluten-Free Pasta: (e.g., rice or corn-based).
1 small Onion: (Finely chopped, SIGHI 0—ensure freshness).
1/2 cup Organic Cream or Coconut Milk: (Check for additives, coconut is SIGHI 0).
1 tbsp Organic Olive Oil: (Extra virgin).
1 tsp Sour Verjus: (The safe acid alternative, SIGHI 0).
Fresh Sage or Parsley: (Finely chopped).
1 pinch Sea Salt & Nutmeg: (To taste).
Preparation
Cook Pasta: Boil gluten-free pasta in salted water according to package directions until al dente.
Sauté Pumpkin: Meanwhile, sauté the onion in olive oil until translucent. Add pumpkin cubes and sauté briefly. Add a splash of water and simmer for about 10–12 minutes until soft.
Make Sauce: Puree the soft pumpkin directly in the pot (or blender). Stir in the cream/coconut milk and verjus until you reach a creamy consistency.
Season: Season with sea salt and a pinch of nutmeg.
Combine: Toss the pasta directly into the sauce, fold in fresh herbs, and mix well.
Serve: Enjoy hot and garnish with pumpkin seeds if desired.
