🐟 Flash-Frozen Herb Salmon with Quinoa | Low-Histamine & Nutrient-Dense
A light, elegant dish that perfectly illustrates how “from survival to thriving” tastes. The combination of high-quality omega-3 fatty acids and the power pseudo-grain quinoa provides you with everything your body needs for a strong immune system.
Fish is often considered risky with histamine intolerance—but it doesn’t have to be! The key lies in absolute freshness. Our recipe uses flash-frozen organic salmon that was frozen immediately after being caught. Combined with quinoa (SIGHI 0) and fresh herbs, we create a meal that is not only safe but also nourishes your body holistically.
Ingredients
2 Organic Salmon Fillets (approx. 4.5 oz each): (Flash-frozen, SIGHI 0—remove from freezer just before cooking).
1/2 cup Quinoa: (White quinoa is usually the mildest).
1 cup Water: (For cooking the quinoa).
2 tbsp Organic Olive Oil: (Extra virgin).
1 tbsp Sour Verjus: (The safe acid alternative to lemon, SIGHI 0).
Fresh Parsley & Chives: (Finely chopped).
1 pinch Sea Salt: (Pure, non-iodized).
Preparation
Prepare Quinoa: Rinse quinoa thoroughly in a fine-mesh strainer under hot water (to remove saponins). Bring to a boil with 1 cup of water and a pinch of salt, then simmer for about 15 minutes until fluffy.
Prepare Salmon: Rinse the frozen salmon briefly under cold water and pat dry.
Marinate: Mix olive oil with verjus and fresh herbs. Generously coat the salmon fillets.
Bake: Place the salmon in a baking dish and roast in a preheated oven at 400°F (200°C) for about 15–20 minutes (depending on thickness).
Serve: Plate the fluffy quinoa, top with the herb salmon, and garnish with fresh herbs.

Why this Recipe is Low-Histamine Friendly
The Golden Rule: Flash-frozen fish stops histamine production instantly. It is often safer than “fresh” fish at the counter.
Quinoa Power: Quinoa is a pseudo-grain (SIGHI 0) that contains no biogenic amines and is very easy to digest.
Verjus over Lemon: We avoid lemon (a common liberator) and use the gentle acidity of verjus (SIGHI 0) instead.
Important “Watch-Out” Points
No Thawing Time: Do not let the salmon thaw for hours in the fridge! Process it directly from frozen or only slightly thawed.
The Reheat Rule: Fish dishes should never be reheated when living with HIT. Always consume immediately after cooking.
