🍗 Lemon Chicken with Roasted Vegetables | Low-Histamine & High-Protein

A hearty dinner that is incredibly easy to prepare, but tastes like a feast thanks to the freshness of the lemon and herbs. Perfect for a relaxed evening without histamine worries.

Many meat dishes rely on marinades with vinegar or soy sauce—both a no-go for HIT. Our Lemon Chicken uses the power of nature: fresh lemon, high-quality olive oil, and aromatic herbs. Combined with crisp roasted vegetables, this creates a light yet satisfying meal that fuels your body without the histamine flare-ups.

Ingredients

  • 14 oz (400g) Organic Chicken Breast: (Must be very fresh or flash-frozen, SIGHI 0).

  • 2 medium Organic Zucchini: (Sliced).

  • 3 Organic Carrots: (Cut into sticks).

  • 1 Organic Lemon: (Juice and zest; check your personal tolerance).

  • 3 tbsp Organic Olive Oil: (Extra virgin).

  • Fresh Rosemary & Thyme: (Coarsely chopped).

  • 1 pinch Sea Salt: (Pure).

Preparation

  1. Prep: Preheat oven to 400°F (200°C). Wash and slice the vegetables.

  2. Marinate: In a bowl, whisk together olive oil, lemon juice, zest, herbs, and salt. Toss the chicken and vegetables until well coated.

  3. Arrange: Place everything on a baking sheet. Make sure the chicken isn’t covered by vegetables so it browns nicely.

  4. Bake: Roast for 25–30 minutes until chicken is cooked through and vegetables are tender-crisp.

  5. Serve: Garnish with fresh herbs and enjoy.
