Ingredients
200-250g Fresh Organic Beef Steak: (e.g., Filet or Sirloin). Crucial: Must be fresh, not dry-aged or long-matured.
3-4 Large Organic Carrots: Peeled and sliced into rounds or batons.
1 tbsp Organic Butter or Ghee: For steaming and finishing.
1 tbsp Organic Olive Oil: For searing the steak.
A pinch of Sea Salt: To taste.
Fresh Parsley: Finely chopped for garnish.
Preparation
Steam the Carrots: Place the carrots in a small pot with a few tablespoons of water and half of the butter. Cover with a lid and steam over medium heat for 8–10 minutes until tender-crisp. The water should mostly evaporate, leaving the carrots glazed in butter.
Prepare the Steak: Take the steak out of the fridge about 15 minutes before cooking to reach room temperature. Pat it completely dry with a paper towel—this is the secret to a perfect crust.
Sear: Heat the olive oil in a heavy-bottomed pan over high heat until very hot. Place the steak in the pan. For a medium-rare finish, sear for about 2–3 minutes per side (depending on thickness).
Rest: Remove the steak from the pan and place it on a warm plate. Top with the remaining butter and let it rest for at least 5 minutes. This allows the fibers to relax and the juices to redistribute.
Serve: Season the steak and carrots with sea salt. Garnish with fresh parsley and serve immediately.
