This vibrant stir-fry is a celebration of texture and color. By combining fluffy organic jasmine or basmati rice with a rainbow of fresh vegetables and a generous handful of garden herbs, you create a meal that is both light and deeply satisfying. It’s a perfect way to use seasonal produce and bring a fresh, herbal aroma into your kitchen.

Ingredients

  • 1 cup Organic Rice: (Jasmine or Basmati work best).

  • 2 cups Water: (Or yeast-free vegetable broth).

  • 1 Medium Organic Zucchini: Sliced into quarters.

  • 2-3 Organic Carrots: Cut into thin matchsticks.

  • 1 cup Fresh Organic Broccoli Florets: Cut into very small pieces.

  • 2 tbsp Organic Coconut Oil or Ghee.

  • A pinch of Sea Salt: To taste.

  • 1 handful of Fresh Garden Herbs: (A mix of parsley, chives, and cilantro).

  • 1 tsp Organic Olive Oil: For the final drizzle.

Preparation

  1. Cook the Rice: Rinse the organic rice thoroughly and cook it in water or broth until fluffy. Set it aside to cool slightly—slightly cooled rice stir-frys better without getting mushy.

  2. Sauté the Vegetables: Heat the coconut oil or ghee in a large pan or wok over medium-high heat. Add the carrots first, stir-frying for 2 minutes. Follow with the broccoli and zucchini. Continue to stir-fry for 4–5 minutes until the vegetables are tender-crisp and bright in color.

  3. Combine: Add the cooked rice to the pan with the vegetables. Toss everything together over high heat for 1–2 minutes, allowing the rice to absorb the flavors and pick up a slight toast.

  4. The Herbal Finish: Turn off the heat. Fold in the freshly chopped garden herbs and season with sea salt.

  5. Serve: Drizzle with a touch of olive oil and serve immediately.

Why this Recipe is Low-Histamine Friendly

This stir-fry is a “green light” paradise for anyone on a sensitive diet:

  • Organic Rice: Naturally gluten-free and one of the most well-tolerated grains in a low-histamine lifestyle.

  • Fresh Veggie Rainbow: Carrots, zucchini, and broccoli are all low-histamine staples that provide vitamins without triggers.

  • No Fermented Sauces: By skipping soy sauce or fish sauce and using fresh herbs and sea salt instead, you avoid the high histamine levels found in fermented condiments.

  • Safe Fats: Coconut oil and ghee are stable at high temperatures and generally very well-tolerated.

Important “Watch-Out” Points

  1. Freshness Matters: Always use fresh vegetables. Avoid pre-cut “stir-fry mixes” from the supermarket, as these can sit for days and begin to develop histamine.

  2. Herb Selection: While parsley, chives, and cilantro are great, avoid adding large amounts of spinach or tomatoes to this stir-fry, as these are higher in histamine.

  3. The Rice Rule: Use freshly cooked rice. If you must use leftover rice, make sure it was frozen immediately after cooking and thawed just before use.
