🍞 Yeast-Free Flatbread | Quick, Crispy & Low-Histamine
Fresh bread without the long wait! This flatbread doesn’t require any yeast, using pure tartar baking powder instead. It’s perfect as an accompaniment to our curries, for dipping in olive oil, or simply on its own as a snack.
The smell of freshly baked bread is amazing—but for many with HIT, traditional bread is off-limits because of the yeast. Yeast is a fermentation product and can quickly overflow your histamine bucket. Our flatbread is the solution: ready in just 15 minutes, safely tolerated thanks to spelt flour (SIGHI 0), and wonderfully crispy. A staple recipe for every Happy Hista kitchen!
Ingredients
2 cups (250g) Spelt Flour (Type 630): (SIGHI 0).
2/3 cup (150ml) Lukewarm Water.
2 tbsp Organic Olive Oil: (Extra virgin).
1 tsp Cream of Tartar Baking Powder: (Low-histamine alternative).
1/2 tsp Sea Salt: (Pure).
Optional: Dried rosemary or thyme (both SIGHI 0).
Preparation
Mix: Combine flour, baking powder, and salt in a bowl. Add water and olive oil.
Knead: Quickly knead the dough by hand or with a hook until it forms a smooth ball. It shouldn’t be sticky (add a little more flour if needed).
Shape: Divide the dough into 4–6 small portions and roll them out very thinly on a floured surface.
Cook: Heat a pan without oil (or with just a tiny bit of olive oil). Fry the flatbreads for about 2 minutes per side until they bubble up and show golden-brown spots.
Serve: Best enjoyed while still warm!
