đ Sweet Zucchini Bread | Moist, Mild & Low-Histamine
Zucchini in cake? Sounds crazy, but it’s the secret to absolute juiciness! This bread is the perfect solution for anyone looking for a wholesome treat that also provides the body with nutrients.
Zucchini is the chameleon of low-histamine cooking. In this sweet bread, it acts as a moisture booster, making the batter incredibly tender. Since zucchini (SIGHI 0) is very neutral in flavor, it pairs perfectly with vanilla and spelt. This bread is a great alternative to classic sponge cake and freezes beautifully when sliced.
Ingredients
10.5 oz (300g) Organic Zucchini: Finely grated and slightly squeezed (SIGHI 0).
2 cups (250g) Spelt Flour (Type 630): The safe choice (SIGHI 0).
1/3 cup (100g) Organic Honey: We recommend the enzyme-rich Forever Bee Honeyâ˘.
2 Organic Eggs: Use fresh only.
1/2 cup (100ml) Organic Rapeseed Oil or melted Coconut Oil: Neutral and safe.
2 tsp Cream of Tartar Baking Powder: Phosphate-free alternative.
1/2 tsp Vanilla Seeds: For a delicate aroma.
1 pinch Sea Salt.
Optional: 1/4 cup chopped pumpkin seeds for extra crunch.
Preparation
Prep: Preheat the oven to 350°F (180°C). Grease a loaf pan.
Zucchini: Finely grate the zucchini and squeeze briefly in a cloth to remove excess water.
Wet: Beat eggs with honey until fluffy. Stir in oil and vanilla.
Dry: Mix flour, baking powder, and salt. Gently fold into the egg mixture.
Finish: Fold in the grated zucchini.
Bake: Pour into the pan and bake for 45â50 minutes (toothpick test!).
Cool: Let it cool completely before slicing.
