🤍 White Chocolate Mousse | Creamy Luxury & Low-Histamine
A dessert like a cloud! This mousse melts in your mouth and satisfies any chocolate craving without straining your histamine levels. The combination of coconut milk and high-quality white chocolate is pure elegance in a glass.
Chocolate with HIT? Yes, but make it white! While dark chocolate can be high in histamine and tyramine, white chocolate consists mainly of cocoa butter (SIGHI 0). The highlight of our recipe: we use coconut milk for lasting creaminess. The only crucial thing is checking the ingredients—soy lecithin should be avoided.
Ingredients
3.5 oz (100g) high-quality White Chocolate: (Choose organic and ensure it’s soy-lecithin free; sunflower lecithin is best).
3/4 cup (200ml) Organic Coconut Milk: (Full fat, chilled overnight so the cream separates).
1/2 tsp Vanilla Seeds: (SIGHI 0).
1 pinch Sea Salt: (To enhance the sweetness).
Optional Garnish: A few fresh blueberries or mint leaves (both SIGHI 0).
Preparation
Prep: Place the coconut milk tin in the fridge the night before. This allows the thick cream to separate from the water.
Melt: Gently melt the white chocolate in a double boiler (don’t let it get too hot!). Let it cool slightly.
Whip: Open the tin and scoop out only the solid white cream. Whip it with a hand mixer until fluffy like whipped cream.
Fold: Stir the vanilla seeds and salt into the coconut cream. Gently fold in the melted (but no longer hot!) chocolate.
Chill: Pour the mousse into small glasses and refrigerate for at least 3–4 hours (ideally overnight) until firm.
