Pan-fried Cod Fillet with Creamy Parsnip Purée | Low-Histamine

This dish is a sophisticated yet incredibly simple meal that brings a fine-dining feel to your home kitchen. The delicate, flaky white fish pairs perfectly with the naturally sweet and earthy notes of the parsnips. Ingredients

  • 300-400g Fresh Cod Fillet: (Skin-on or skinless, depending on preference).

  • 3-4 Large Organic Parsnips: Peeled and chopped into small cubes.

  • 1 Medium Organic Potato: Peeled and diced (helps create a stable, creamy texture).

  • 100ml Organic Milk or Coconut Milk: (For the purée).

  • 2 tbsp Organic Butter or Ghee: (Use Ghee for a safer low-histamine option).

  • 1 tbsp Organic Olive Oil: For frying the fish.

  • A pinch of Sea Salt: To taste.

  • Fresh Chives: Finely chopped for garnish.

Preparation

  1. Make the Purée: Place the chopped parsnips and potatoes in a pot and cover with water. Add a pinch of salt and bring to a boil. Simmer for 15–20 minutes until very tender.

  2. Mash & Smooth: Drain the water and add the milk and 1 tbsp of butter/ghee. Use an immersion blender or a potato masher to create a silky, smooth purée. Season with salt to taste and keep warm.

  3. Prepare the Fish: Pat the cod fillets dry with a paper towel. This is crucial for getting a nice sear. Season lightly with sea salt.

  4. Pan-Fry: Heat the olive oil and the remaining butter/ghee in a non-stick pan over medium-high heat. Place the cod in the pan. Fry for 3–4 minutes on the first side (skin-side down if applicable) until golden and crispy.

  5. Finish: Carefully flip the fillet and cook for another 1–2 minutes until the fish is opaque and flakes easily with a fork.

  6. Serve: Spread a generous portion of parsnip purée on each plate, place the cod fillet on top, and garnish with fresh chives.
