🍎 Juicy Spelt Apple Cake | Low-Histamine & Digestible
Sacrifice was yesterday—today is for feasting! This apple pie is proof that simple, pure ingredients deliver the best results. We swap wheat for spelt and avoid problematic spices without compromising on flavor.
A life without cake is possible, but why bother? For those with histamine intolerance, traditional pastries can be tricky since wheat, cinnamon, or artificial flavors can irritate the gut. Our Spelt Apple Cake relies on spelt flour (Type 630), which is highly tolerated according to the SIGHI list (Level 0). Instead of cinnamon, we use real vanilla, giving the cake an elegant, gentle note. This way, you can enjoy every bite without regret.
Ingredients
2 cups (250g) Spelt Flour (Type 630): (SIGHI 0).
2/3 cup (150g) Soft Organic Butter: (Or margarine without critical additives).
1/2 cup (120g) Raw Cane Sugar or Forever Bee Honey * : (Adjust to preference).
3 Organic Eggs: (Use fresh).
3-4 large Organic Apples: (e.g., Elstar or Jonagold, peeled).
2 tsp Cream of Tartar Baking Powder: (Low-histamine alternative).
1 pinch Sea Salt.
Seeds of 1 Vanilla Bean: (Vanilla is SIGHI 0).
A splash of Sparkling Water: (For extra fluffiness).
Preparation
Prep: Preheat the oven to 350°F (180°C). Grease a springform pan.
Creaming: Beat butter and sugar until fluffy. Stir in the eggs one by one. Add the vanilla seeds.
Dry Ingredients: Mix flour with cream of tartar baking powder and salt. Briefly stir into the batter, alternating with a splash of sparkling water.
Prepare Apples: Peel, core, and thinly slice the apples.
Bake: Pour the batter into the pan and arrange the apple slices in a fan shape on top. Bake for about 40–45 minutes until golden brown (do a toothpick test!).
Cooling: Let the cake cool slightly in the pan before removing it carefully.
