🥥 Coconut Chia Pudding with Mango Coulis | Tropical & Low-Histamine
A dessert that feels like breakfast—or breakfast that tastes like dessert! This creamy pudding is the perfect combination of healthy fats and fruity freshness. Completely safe, incredibly delicious, and a real treat for the taste buds.
Sweet dreams without regret! For those with histamine intolerance, many store-bought puddings or fruit yogurts are problematic due to additives and fermented dairy. Our chia pudding relies on mild coconut milk and the freshness of mango (both SIGHI 0). Chia seeds are nutrient powerhouses rich in fiber that gently support your gut. Paired with vanilla and mango, it’s an exotic treat that won’t overflow your histamine bucket.
Ingredients
4 tbsp Organic Chia Seeds: (Nutrient-dense, SIGHI 0).
1 cup (250ml) Organic Coconut Milk: (Ensure 100% coconut without additives).
1 ripe Organic Mango: (Freshly pureed, SIGHI 0).
1/2 tsp Vanilla Seeds: (Gentle aroma, SIGHI 0).
1 tsp Organic Honey or Maple Syrup: (We recommend Forever Bee Honey™ * ).
Optional: A few coconut chips for topping.
Preparation
Mix: Thoroughly combine chia seeds, coconut milk, vanilla, and sweetener in a bowl or jar.
Set: Place the mixture in the fridge for at least 2 hours (or overnight). Stir again after about 15 minutes to prevent clumps.
Fruit Layer: Peel the mango, cut the flesh from the pit, and blend into a smooth coulis (puree).
Layer: Once the pudding is set, top it with the mango coulis.
Garnish: Decorate with coconut chips or fresh mint and enjoy chilled.
