This dish is a warm, aromatic embrace for your digestive system. The combination of creamy coconut milk and vibrant turmeric creates a luxurious sauce that coats tender organic chicken strips perfectly. It is a mild, Southeast Asian-inspired meal that is both comforting and incredibly anti-inflammatory.
Ingredients
400-500g Organic Chicken Breast: Sliced into thin strips.
1 can (400ml) Organic Coconut Milk: (Full-fat for the creamiest texture).
1 tbsp Organic Coconut Oil: For sautéing.
1 tsp Organic Turmeric Powder: (Or freshly grated turmeric root).
1 small piece of Fresh Ginger: Grated (optional, for extra warmth).
A pinch of Sea Salt: To taste.
Fresh Cilantro: Roughly chopped for garnish.
1 cup Organic Jasmine Rice: For serving.
Preparation
Prepare the Rice: Rinse the jasmine rice and cook according to package instructions until fluffy.
Sauté the Chicken: Heat the coconut oil in a large pan over medium-high heat. Add the chicken strips and sauté for 3–4 minutes until they are golden-brown on the outside.
Bloom the Spices: Lower the heat slightly. Stir in the turmeric (and ginger if using). Let the spices “bloom” in the oil for about 30 seconds until fragrant—this activates the color and flavor.
Simmer in Coconut Milk: Pour in the coconut milk and stir well to combine with the turmeric. Bring to a gentle simmer.
Cook Through: Let the chicken simmer in the sauce for about 5–8 minutes until the sauce thickens slightly and the chicken is fully cooked and tender.
The Finish: Season with sea salt. Serve the golden chicken over a bed of jasmine rice and garnish generously with fresh cilantro.
