🥗 Refreshing apple and celery salad with verjus dressing | Low in histamine

Crisp, fresh, and completely safe: this salad combines the sweetness of local apples with the tart freshness of celery. The highlight is the dressing made with verjus, the low-histamine alternative to vinegar or lemon. A true “from survival to blossoming” recipe!

The biggest hurdle for low-histamine salads is usually the dressing. Vinegar and lemon juice can be major triggers. At Happy Hista Life, we use Verjus—the juice of unripe grapes. Combined with crisp organic apples and celery (both SIGHI 0), we’ve created a refreshing dish that boosts your vitality while staying gentle on your gut.

Ingredients

  • 2 Organic Green Apples: (e.g., Granny Smith, SIGHI 0).

  • 3 Organic Celery Stalks: (Washed and thinly sliced).

  • 2 tbsp Organic Olive Oil: (Extra virgin).

  • 2 tbsp Sour Verjus: (The ultimate low-histamine vinegar substitute).

  • 1 pinch Sea Salt & white pepper: (To taste).

Preparation

  1. Slice: Core the apples and cut into thin wedges or dice. Thinly slice the celery stalks.
