🍝 „Nomato“ Bolognese | Low-Histamine & Tomato-Free
A lifesaver for all pasta lovers! This sauce looks like the original, tastes wonderfully hearty, but contains no tomatoes at all. The combination of beetroot and carrots gives it the perfect color and creaminess.
For many of us, tomatoes are the ultimate “final boss” when dealing with histamine intolerance. They act as liberators and are often high in histamine. But giving up Bolognese? Never! Our “Nomato” sauce uses the natural sweetness of carrots and the earthy depth of beetroot to create a deceptively real alternative. With verjus for that subtle tang, you’ll barely notice the difference—but your gut definitely will!
Ingredients
14 oz (400g) Organic Ground Beef: (Must be extremely fresh, SIGHI 0).
7 oz (200g) Fresh Beetroot: (Peeled and diced).
10.5 oz (300g) Carrots: (Peeled and diced).
1 small Onion & 1 Garlic Clove: (Finely chopped, if tolerated).
1 Celery Stalk: (Finely diced).
2 tbsp Organic Olive Oil: (Extra virgin).
2-3 tbsp Sour Verjus: (The perfect low-histamine vinegar alternative).
1 cup (200ml) Meat Broth or Water: (Yeast-free!).
Seasoning: Fresh oregano, thyme, and a pinch of sea salt.
Preparation
Sauté: Cook the onion, garlic, and celery in olive oil until translucent.
Brown: Add the ground beef and cook until browned and crumbled.
Veggie Power: Add the carrots and beetroot, sautéing briefly.
Simmer: Deglaze with verjus and broth/water. Cover and simmer for about 20–25 minutes until the vegetables are tender.
The Puree Trick: Remove about half of the vegetables (or the entire sauce, depending on preferred texture) and puree until smooth. Mix everything back together. This creates that classic “tomato-like” consistency.
Finish: Season with fresh herbs and sea salt. Serve over gluten-free pasta.
