🥥 Mild Coconut Chicken Curry | Low-Histamine & Comfort Food

A curry without regret! We avoid ready-made spice mixes and liberators such as chickpeas. Instead, we rely on anti-inflammatory individual spices and creamy coconut milk. A real feel-good dish that warms your stomach from the inside.

Curry and histamine intolerance? It works—if you know the rules! Classic curry powders often contain chili or cloves, which can trigger reactions. Our “Safe Hack” uses turmeric and ginger for that golden aroma and verjus for the necessary freshness. Without legumes, but with plenty of fresh vegetables, this curry is the perfect companion for a relaxed evening.

Ingredients

  • 14 oz (400g) Organic Chicken Breast: (Extremely fresh, diced, SIGHI 0).

  • 3/4 cup (200ml) Organic Coconut Milk: (100% coconut, no thickeners).

  • 2 Organic Carrots & 1 small Zucchini: (Freshly sliced/diced, SIGHI 0).

  • 1 tbsp Organic Olive Oil: (Extra virgin).

  • 2 tbsp Sour Verjus: (The low-histamine acid alternative, SIGHI 0).

  • Spice Mix: 1 tsp turmeric, 1/2 tsp ground coriander, 1 tsp freshly grated ginger.

  • 1 pinch Sea Salt: (Pure, non-iodized).

  • Happy Hista Extra: 1 tsp Forever Bee Honey™ to balance the flavors.

Preparation

  1. Sauté: Briefly sear the chicken cubes in olive oil until cooked through. Remove from the pan and keep warm.

  2. Veggies & Spices: Sauté carrots and zucchini in the remaining oil. Add turmeric, coriander, and ginger; toast briefly until fragrant.

  3. Deglaze: Pour in coconut milk and verjus. Simmer over medium heat for about 10–12 minutes.

  4. Finish: Return chicken to the sauce, heat through, and season with sea salt and Forever Bee Honey™.

  5. Serve: Garnish with fresh parsley and serve with white rice.
